The machines are in-house excavators and skid steers. The published line also includes mulching where that is the right tool. A one-acre oak hammock and a quarter-acre of Brazilian pepper are not the same day and not the same price. Acreage, access, and what you want left standing are the quote.

Brush is the fast part. Stumps are the part that decides the machine. A pad that has to take a slab cannot leave a stump under the footprint. A yard that only has to be walkable might. Say which. If the next crew is forming a slab, they need the grade, not a blanket of chips.
Haul-off means the vegetative debris leaves. It does not mean the topsoil leaves with it unless you asked to strip soil. Stripping soil and then buying fill to put back is a loop you should only pay for if the soil is unsuitable. Tell us if the dirt stays.
